From Bangkok Beginnings
The story of 55 Thai Kitchen begins with owner and Head Chef Vijit Pipatkhajonchai, known affectionately as “Jit.” In Bangkok, Jit’s family owned a neighborhood restaurant where he started helping in the kitchen before the age of 15. It was there that he discovered not only his skill for balancing flavors but also his passion for sharing food that brings people together.
A Lifelong Culinary Journey
By the age of 19, Jit had already opened his first restaurant in Bangkok. Over the next 25 years, he built and operated nine successful restaurants, mastering a range of Thai regional styles along the way. Each venture deepened his connection to authentic Thai cuisine and prepared him for his next chapter — bringing those same flavors and techniques to San Diego.
A Kitchen With a Purpose
What makes 55 Thai Kitchen different from Jit’s earlier ventures is its mission. Beyond great food, this restaurant is his opportunity to give back. As 55 Thai Kitchen grows, the team aims to regularly provide free meals to children in the communities they serve, ensuring that good food reaches those who need it most.
